This Sweet Potato and Chick Pea Soup, in my opinion, is the perfect winter soup. It’s thick and creamy without being too rich and it’ll warm you up from the inside out! Enjoy with pita crisps and slices of old cheddar cheese.

Sweet Potato Chick Pea Soup

INGREDIENTS

1 tablespoon olive oil
1/2 onion, diced
1 teaspoon minced garlic
3/4 teaspoon ground coriander
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups veggie broth
1 can chick peas
2 medium sweet potatoes, peeled and diced
2 tablespoons fresh lime juice
1/2 tsp cayenne pepper (optional)

DIRECTIONS

  1. Heat the oil in a pan over medium heat. Add the chopped onions, cooking for five to 10 minutes or until they’re soft. Add garlic and cook for another minute.
  2. Add the coriander, cumin, salt, and pepper, mixing for 30 seconds. Pour in the veggie broth, beans, and diced sweet potatoes. Bring to a boil and then simmer, uncovered, for 20 to 30 minutes, or until the potatoes are tender.
